Ingredients
  

  • 🍞 Dough:
  • 2 ½ cups 315 g all-purpose flour
  • ¼ cup 50 g sugar
  • 1 packet 7 g active dry yeast
  • ½ cup 120 ml warm milk
  • 1 egg
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 🧈 Butter Layer:
  • 200 g cold unsalted butter
  • 🧀 Cream Cheese Filling optional:
  • 200 g cream cheese
  • 3 tbsp sugar
  • 1 tsp vanilla
  • 🍓 Other Fillings optional:
  • Fruit jam strawberry, apricot, raspberry
  • Custard
  • 🥚 Egg Wash:
  • 1 egg + 1 tbsp milk

Method
 

  1. Prepare dough
  2. Mix yeast with warm milk and let activate. Combine flour, sugar, salt, egg, and vanilla. Add yeast mixture and knead until smooth. Chill 1 hour.
  3. Prepare butter block
  4. Flatten cold butter between parchment into a square.
  5. Laminate dough
  6. Roll dough, place butter inside, fold, and roll out. Fold into thirds (like a letter). Chill 30 minutes. Repeat folding 2–3 times.
  7. Shape pastries
  8. Roll dough out and cut into squares or shapes. Add filling in the center.
  9. Proof
  10. Let pastries rest for 30–45 minutes until slightly puffy.
  11. Bake
  12. Brush with egg wash and bake at 190°C (375°F) for 15–18 minutes until golden.
