- Prepare the Feta: Remove the block of feta cheese from its brine and pat it relatively dry with a paper towel. Crumble the block into large chunks directly into the bowl of your food processor.
- Add the Base Ingredients: Add the whole milk Greek yogurt, extra virgin olive oil, smashed garlic clove, and fresh lemon juice to the food processor with the crumbled feta.
- Whip until Smooth: Turn the food processor on and blend the mixture on high for about 3 to 4 minutes. You will need to pause the machine once or twice to scrape down the sides of the bowl with a silicone spatula. Continue blending until the mixture transforms from grainy cheese into a completely smooth, airy, and luxurious cream.
- Plate the Dip: Transfer the smooth whipped feta to a wide, shallow serving bowl or spread it beautifully across a small serving platter. Use the back of a spoon to create deep, dramatic swirls and swooshes in the surface of the dip.
- Garnish and Serve: Drizzle the hot honey generously over the top, allowing it to pool beautifully in the swirls you created. Sprinkle the chopped pistachios and fresh thyme leaves evenly across the dish. Serve immediately with sturdy pita chips, warm bread, or crisp vegetables for dipping.
Notes
Use Block Feta: You absolutely must use a solid block of feta cheese, ideally one sold floating in brine. Pre-crumbled feta is coated in anti-caking powders that will prevent the cheese from ever whipping into a smooth, creamy texture.
Making Your Own Hot Honey: If you cannot find a bottle of hot honey at the store, you can easily make your own. Simply warm 1/4 cup of regular honey in the microwave or on the stove, stir in 1/2 teaspoon of crushed red pepper flakes, and let it steep for 10 minutes before drizzling.
Temperature Matters: If your feta is straight out of the cold refrigerator, it might take a bit longer to whip smoothly. Letting the cheese sit at room temperature for 15 minutes before blending yields the absolute best, silkiest texture.
