Cook pasta
Boil macaroni in salted water until al dente. Drain and set aside.
Make roux
Melt butter in a pan, add flour, and cook for 1–2 minutes.
Create sauce
Gradually whisk in warm milk and cream. Cook until thickened.
Add cheese
Stir in cheddar, mozzarella, and Parmesan until smooth.
Add truffle
Mix in truffle oil (start small—it’s strong).
Combine
Add cooked pasta to the sauce and mix well.
Bake (optional)
Transfer to a baking dish, top with breadcrumbs and Parmesan, and bake at 200°C (400°F) for 10–15 minutes until golden.
