Prepare dough
Mix flour, baking powder, baking soda, and salt in a bowl.
Cream butter & sugar
Beat butter and sugar until light and fluffy. Add egg, vanilla, and espresso.
Combine
Gradually mix dry ingredients into wet until a soft dough forms.
Shape cookies
Scoop dough onto a lined baking tray.
Bake
Bake at 180°C (350°F) for 12–15 minutes until lightly golden. Cool completely.
Make frosting
Whip cream until soft peaks. Mix mascarpone, sugar, and vanilla, then fold in whipped cream.
Assemble
Spread frosting over cooled cookies and dust with cocoa powder.
