Soft, coffee-infused cookies topped with creamy mascarpone frosting and a dusting of cocoa powder—just like tiramisu in cookie form!

Ingredients
  

  • 🍪 Cookies:
  • 2 cups 250 g all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 120 g unsalted butter softened
  • 150 g sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp espresso or strong coffee cooled
  • 🧀 Mascarpone Frosting:
  • 250 g mascarpone cheese
  • 100 ml heavy cream
  • 80 g powdered sugar
  • 1 tsp vanilla extract
  • ☕ Topping:
  • Cocoa powder for dusting
  • Optional: chocolate shavings

Method
 

  1. Prepare dough
  2. Mix flour, baking powder, baking soda, and salt in a bowl.
  3. Cream butter & sugar
  4. Beat butter and sugar until light and fluffy. Add egg, vanilla, and espresso.
  5. Combine
  6. Gradually mix dry ingredients into wet until a soft dough forms.
  7. Shape cookies
  8. Scoop dough onto a lined baking tray.
  9. Bake
  10. Bake at 180°C (350°F) for 12–15 minutes until lightly golden. Cool completely.
  11. Make frosting
  12. Whip cream until soft peaks. Mix mascarpone, sugar, and vanilla, then fold in whipped cream.
  13. Assemble
  14. Spread frosting over cooled cookies and dust with cocoa powder.

  16. Chill dough 10–15 minutes for thicker cookies
  17. Use strong espresso for better flavor
  18. Frost only when cookies are fully cool
