- Roast the Beets: Preheat your oven to 400°F (200°C). Toss the scrubbed beets with olive oil and wrap them individually in aluminum foil. Place them on a baking sheet and roast for 45 to 60 minutes, until easily pierced through with a fork.
- Peel and Slice: Let the roasted beets cool until safe to handle. Use a paper towel to rub off the skins (they should slip right off easily), then slice or cube the beets into bite-sized wedges.
- Make the Vinaigrette: In a small bowl or mason jar, whisk together the extra-virgin olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper until smooth and well emulsified.
- Assemble the Salad: In a large salad bowl, create a base of fresh baby arugula or mixed greens. Arrange the roasted beet slices, crumbled goat cheese, toasted walnuts, and sliced red onion gracefully over the greens.
- Dress and Serve: Drizzle the balsamic vinaigrette evenly over the salad just before serving. Toss gently if desired, or serve as-is to showcase the gorgeous layers.
Notes
Roasting Ahead of Time: You can roast and peel the beets up to 3 days in advance and store them in an airtight container in the refrigerator until you are ready to assemble the salad.
