Ingredients

  • 2 cups fresh strawberries hulled and chopped (or frozen, thawed)
  • 2 tablespoons granulated sugar for the strawberry swirl
  • 1 tablespoon fresh lemon juice
  • 2 cups heavy whipping cream very cold
  • 1 can 14 ounces sweetened condensed milk
  • 2 teaspoons pure vanilla extract
  • 1 package 14.3 ounces golden sandwich cookies (like Golden Oreos)
  • 1 cup freeze-dried strawberries
  • 4 tablespoons unsalted butter melted
  • Pinch of kosher salt

Equipment

  • Food processor or rolling pin for crushing the topping
  • Electric hand mixer or stand mixer
  • 9x5-inch loaf pan or freezer-safe dish
  • Parchment paper
  • Silicone spatula

Method

  1. Make the Strawberry Purée: Combine the chopped strawberries, granulated sugar, and lemon juice in a small saucepan over medium heat. Simmer for 8 to 10 minutes, mashing the fruit with a fork until it breaks down into a thick, jammy reduction. Remove from heat and let cool completely.
  2. Prepare the Crunch Coating: Place the golden cookies and the freeze-dried strawberries into a food processor. Pulse several times until coarse, vibrant pink crumbs form (avoid turning them into fine powder). Transfer the mixture to a bowl, stir in the melted butter and a pinch of salt until evenly moistened, and set aside.
  3. Whip the Cream: Pour the very cold heavy whipping cream into a large mixing bowl. Using an electric hand mixer or stand mixer fitted with the whisk attachment, beat on medium-high speed until stiff peaks form.
  4. Fold the Base: Gently fold the sweetened condensed milk and pure vanilla extract into the whipped cream using a silicone spatula, taking care not to deflate the fluffy mixture.
  5. Layer and Swirl: Line a 9x5-inch loaf pan with parchment paper. Press half of the cookie crunch mixture firmly into the bottom of the pan. Spread half of the vanilla ice cream mixture over the crumbs, then drop spoonfuls of the cooled strawberry purée on top, swirling gently with a knife. Repeat the layers with the remaining ice cream and strawberry purée, finishing with a generous dusting of the remaining cookie crunch on top.
  6. Freeze Until Firm: Cover the loaf pan tightly with plastic wrap and freeze for at least 6 hours, or overnight, until completely solid and scoopable.
  7. Slice and Serve: Lift the frozen ice cream out of the pan using the parchment paper overhang. Slice into thick squares or scoops and serve immediately.

Notes

Keep Cream Cold: For the fluffiest no-churn ice cream base, ensure your heavy whipping cream and mixing bowl are thoroughly chilled before you begin whipping.
Freeze-Dried Fruit Secret: Using freeze-dried strawberries instead of fresh fruit for the dry coating prevents the crumbs from getting soggy, keeping that signature crunchy texture intact.
Serving Tip: If the loaf is frozen solid, let it sit at room temperature for 5 to 10 minutes before slicing to make partitioning clean, beautiful portions much easier.
