  • 2 packages 8 ounces each cream cheese, softened to room temperature
  • 1/2 cup buffalo wing sauce like Frank's RedHot
  • 1/2 cup ranch dressing or blue cheese dressing
  • 1 cup sharp cheddar cheese freshly shredded (divided)
  • 1 cup mozzarella cheese freshly shredded (divided)
  • 1/4 teaspoon garlic powder
  • Chopped fresh green onions or chives for garnish
  • Tortilla chips celery sticks, and carrot batons, for serving

Equipment

  • 8x8-inch baking dish or oven-safe skillet
  • Mixing bowls and silicone spatula
  • Measuring cups and spoons
  • Hand mixer or forks (for shredding chicken)

Method

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish or oven-safe skillet with cooking spray or butter.
  2. Soften and Mix Base: In a large mixing bowl, beat the softened cream cheese with a hand mixer or wooden spoon until smooth and creamy.
  3. Add Buffalo Sauce and Seasoning: Stir the buffalo wing sauce, ranch dressing, and garlic powder directly into the cream cheese until completely combined and smooth.
  4. Fold in Chicken and Cheese: Fold in the shredded cooked chicken, half of the shredded cheddar cheese, and half of the shredded mozzarella cheese until thoroughly incorporated into the mixture.
  5. Transfer to Baking Dish: Spread the chicken mixture evenly into your prepared baking dish. Sprinkle the remaining cheddar and mozzarella cheeses evenly across the top.
  6. Bake Until Bubbly: Bake uncovered at 375°F (190°C) for 20 minutes, or until the dip is hot, bubbling around the edges, and the cheese on top is fully melted and lightly golden.
  7. Garnish and Serve: Remove from the oven, garnish with chopped green onions or chives, and serve warm directly from the dish with tortilla chips, celery sticks, and carrot batons.

Notes

Time-Saving Shortcut: Using store-bought rotisserie chicken or canned chicken breast is the ultimate way to cut down prep time while keeping the dish delicious and tender.
Adjusting the Heat: If you prefer a milder dip, use slightly less buffalo sauce or mix in a splash of extra ranch dressing. For extra heat, add a dash of cayenne pepper or extra hot sauce.
Make-Ahead Friendly: You can assemble the entire dip in the baking dish ahead of time, cover it tightly, and store it in the refrigerator for up to 24 hours before baking. Just add a few extra minutes to the bake time if going straight from the fridge.
