- Prep the Ingredients: Rinse the fresh cilantro thoroughly and pat dry. Roughly chop the jalapeño peppers and peel the garlic cloves so they blend evenly without leaving large chunks.
- Blend the Aromatics: Place the cilantro, chopped jalapeños, and garlic cloves directly into the bowl of a food processor or blender. Pulse several times until finely minced.
- Add the Creamy Elements: Add the mayonnaise, crumbled cotija cheese, fresh lime juice, extra-virgin olive oil, white vinegar, kosher salt, and black pepper to the processor.
- Process Until Smooth: Blend on high speed for 30 to 45 seconds, stopping halfway through to scrape down the sides with a silicone spatula, until the sauce is completely smooth, vibrant green, and emulsified.
- Taste and Adjust: Taste the sauce and adjust the salt or lime juice if needed. For a spicier kick, leave a few pepper seeds in during blending.
- Chill and Serve: Transfer the sauce to a glass jar. Serve immediately, or cover and chill in the refrigerator for at least 30 minutes to let the flavors meld together.

Adjusting the Heat Level: The heat in this sauce comes directly from the peppers. If you prefer a milder sauce, slice the jalapeños in half and scrape out all the white ribs and seeds before adding them to the food processor.
Cheese Alternatives: While cotija or queso fresco provides the most authentic savory depth, grated parmesan or even a spoonful of nutritional yeast can work wonderfully if you are in a pinch.
