Ingredients
  

  • 🦃 Turkey:
  • 1 whole turkey 4–6 kg, thawed
  • 4 tbsp butter softened
  • 2 tbsp olive oil
  • Salt and black pepper
  • 🌿 Aromatics:
  • 1 onion quartered
  • 1 lemon halved
  • 4 cloves garlic
  • Fresh herbs thyme, rosemary, parsley
  • 🧂 Seasoning:
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 🥣 Optional Gravy:
  • Turkey drippings
  • 2 tbsp flour
  • 2 cups broth

Method
 

  1. Prepare turkey
  2. Pat turkey dry. Rub with butter, olive oil, salt, pepper, and spices.
  3. Stuff aromatics
  4. Place onion, lemon, garlic, and herbs inside the cavity.
  5. Preheat oven (low)
  6. Set oven to 90–100°C (195–210°F).
  7. Roast overnight
  8. Place turkey breast-side up in a roasting pan. Cover loosely with foil and roast for 8–10 hours.
  9. Brown the skin
  10. In the morning, increase oven to 220°C (425°F) and roast uncovered for 20–30 minutes until golden.
  11. Rest
  12. Let turkey rest before carving.

  15. Use a meat thermometer (internal temp: ~75°C / 165°F)
  16. Don’t skip the final high-heat step for crispy skin
