Prepare turkey
Pat turkey dry. Rub with butter, olive oil, salt, pepper, and spices.
Stuff aromatics
Place onion, lemon, garlic, and herbs inside the cavity.
Preheat oven (low)
Set oven to 90–100°C (195–210°F).
Roast overnight
Place turkey breast-side up in a roasting pan. Cover loosely with foil and roast for 8–10 hours.
Brown the skin
In the morning, increase oven to 220°C (425°F) and roast uncovered for 20–30 minutes until golden.
Rest
Let turkey rest before carving.
