Method
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper or heavy-duty aluminum foil for easy cleanup.
- Cook the Taco Meat: Heat a skillet over medium-high heat. Add the ground beef and cook until fully browned, breaking it apart with a wooden spoon. Drain any excess grease. Stir in the taco seasoning and water, reducing heat to simmer for 5 minutes until thickened and flavorful.
- First Layer of Nachos: Arrange half of the tortilla chips in a single, slightly overlapping layer across the prepared baking sheet. Sprinkle half of the drained black beans, half of the seasoned taco meat, and half of the shredded cheese evenly over the chips.
- Second Layer: Repeat the process with a second layer using the remaining tortilla chips, black beans, taco meat, and the rest of the shredded cheese to ensure every bite is packed.
- Bake Until Melted: Place the sheet pan into the preheated oven and bake for 8 to 10 minutes, or until the cheese is completely melted, bubbling, and slightly golden around the edges.
- Add Fresh Toppings: Remove the pan carefully from the oven. Scatter the drained pico de gallo, sliced pickled jalapeños, diced avocado, dollops of sour cream, and fresh cilantro directly over the warm nachos.
- Serve Immediately: Serve the sheet pan straight to the table while hot and let everyone dig in!
Notes
Prevent Soggy Nachos: Layering the chips in two stages with cheese in between ensures the chips don't get soggy. Also, adding wet toppings like sour cream, avocado, and salsa after baking keeps the chips crisp.
Sturdy Chips Matter: Use thick, restaurant-style corn tortilla chips rather than thin, delicate ones so they can hold the heavy weight of the meat, beans, and melted cheese without breaking.
Cheese Selection: Freshly grating your own block cheese provides a much smoother, stretchier melt than pre-packaged shredded cheese, which contains anti-caking starches.
