- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
- In a large bowl (or using a stand mixer), beat the softened butter, creamy peanut butter, granulated sugar, and brown sugar together on medium speed for about 2 minutes until smooth and creamy.
- Mix in the egg and vanilla extract until fully combined and fluffy, scraping down the sides of the bowl as needed.
- Turn the mixer to low and slowly add the dry ingredients just until combined. Do not overmix!
- Gently fold in 3/4 cup of the semi-sweet chocolate chips using a spatula.
- Cover the bowl and chill in the refrigerator for 30 to 45 minutes to prevent the cookies from spreading too flat.
- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- Scoop balls of dough (about 2 tablespoons each) and place them 2 inches apart on the baking sheet. Gently press down on top of the dough balls with the palm of your hand or a fork, and press a few reserved chocolate chips into the tops.
- Bake for 9 to 11 minutes, or until the edges are just set and lightly golden. (The centers will still look soft and slightly underbaked).
- Remove from the oven and let the cookies rest on the hot baking sheet for 5 minutes to finish setting, then transfer them to a wire rack to cool completely.
Notes
Peanut Butter Choice: Stick with standard, shelf-stable creamy peanut butter. Natural peanut butters that separate and contain excess oil can make the dough too greasy and cause the cookies to spread too much.
