Moroccan Tagine Recipe

A traditional Moroccan dish slow-cooked with warm spices, tender chicken, olives, and preserved lemons. Rich, aromatic, and perfect served with bread or couscous.

Ingredients
  

  • For the Tagine:
  • 4 chicken thighs or mixed pieces
  • 2 tablespoons olive oil
  • 1 large onion finely chopped
  • 3 garlic cloves minced
  • 1 teaspoon ground ginger
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon cinnamon
  • Salt and pepper to taste
  • 1 cup chicken broth or water
  • 1 preserved lemon cut into wedges
  • ½ cup green olives
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh cilantro chopped

Method
 

  1. Prepare the meat
  2. Season meat with salt, pepper, ginger, turmeric, paprika, cumin, and cinnamon.
  3. Sauté base
  4. Heat olive oil in a tagine or deep pan. Add onions and cook until soft. Stir in garlic.
  5. Brown the meat
  6. Add chicken pieces and lightly brown on all sides.
  7. Simmer
  8. Pour in meat broth, cover, and cook on low heat for about 40 minutes.
  9. Add extras
  10. Add preserved lemon and olives. Continue cooking for another 20–30 minutes until meat is tender.
  11. Finish
  12. Sprinkle with fresh parsley and cilantro before serving.
