- Prepare the meat
- Season meat with salt, pepper, ginger, turmeric, paprika, cumin, and cinnamon.
- Sauté base
- Heat olive oil in a tagine or deep pan. Add onions and cook until soft. Stir in garlic.
- Brown the meat
- Add chicken pieces and lightly brown on all sides.
- Simmer
- Pour in meat broth, cover, and cook on low heat for about 40 minutes.
- Add extras
- Add preserved lemon and olives. Continue cooking for another 20–30 minutes until meat is tender.
- Finish
- Sprinkle with fresh parsley and cilantro before serving.
