Moroccan Kofta Recipe

Juicy, spiced ground meat shaped into meatballs or patties and cooked in a rich tomato sauce. A flavorful North African dish often served with bread or eggs.

Ingredients
  

  • For the Kofta:
  • 500 g ground beef or lamb
  • 1 small onion finely grated
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh cilantro chopped
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ teaspoon turmeric
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • For the Tomato Sauce:
  • 2 tablespoons olive oil
  • 3 ripe tomatoes grated or blended
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ teaspoon turmeric
  • Salt and pepper to taste
  • ½ cup water
  • Optional:
  • 3 –4 eggs

Method
 

  1. Prepare the kofta mixture
  2. In a bowl, mix ground meat, onion, garlic, herbs, and spices until well combined.
  3. Shape the kofta
  4. Form into small meatballs or oval shapes.
  5. Make the sauce
  6. Heat olive oil in a pan or tagine. Add garlic and tomatoes, then spices. Simmer for 10–15 minutes.
  7. Cook the kofta
  8. Add meatballs to the sauce. Cover and cook for 20 minutes until fully cooked.
  9. Add eggs (optional)
  10. Crack eggs over the sauce and cook until set.
  11. Serve
  12. Garnish with fresh herbs and serve hot with bread.
