1️⃣ Make Chermoula
In a bowl, mix parsley, cilantro, garlic, spices, lemon juice, olive oil, salt, and pepper into a paste.
2️⃣ Marinate Fish
Coat fish generously with chermoula (inside and out if whole).
Let marinate 30–60 minutes for best flavor.
3️⃣ Prepare Dish
Preheat oven to 375°F / 190°C.
In a baking dish, layer potatoes, onions, tomatoes, and peppers.
Place marinated fish on top.
Spread remaining chermoula over everything.
4️⃣ Bake
Cover with foil and bake 20 minutes.
Remove foil and bake another 10 minutes until fish is tender and vegetables are cooked.
5️⃣ Serve
Serve hot with Moroccan bread (khobz) or couscous.
Drizzle with extra lemon juice if desired.
