Method
- Cook the Sausage Mixture
- Heat olive oil in a skillet over medium heat.
- Add sausage, breaking it apart with a spoon until browned and cooked through.
- Add onions, peppers, and garlic. Sauté for 3–4 minutes until softened.
- Season with smoked paprika, chili powder, salt, and pepper. Remove from heat.
- Assemble the Quesadillas
- Lay out the tortillas.
- On one half of each tortilla, sprinkle a mix of cheddar and mozzarella, add a scoop of the sausage mixture, then top with another layer of cheese.
- Fold the tortilla over to close.
- Cook Until Golden & Melty
- Heat a large skillet or griddle over medium heat and melt a little butter.
- Cook each quesadilla for 2–3 minutes per side, until golden brown and the cheese is melted.
- Slice & Serve
- Cut each quesadilla into wedges.
- Serve hot with salsa, sour cream, and fresh cilantro.
Notes
wap sausage for ground chicken or chorizo for a flavor twist.
For a breakfast version, add scrambled eggs to the filling.
Add black beans or corn for extra texture.
Use whole-wheat or gluten-free tortillas if preferred.
