Melty Sausage Mashup Quesadilla Recipe

Ingredients
  

  • For the Filling
  • 1 tbsp olive oil
  • ½ lb 225 g sausage (pork, turkey, or chicken), casings removed
  • ½ cup onion finely diced
  • ½ cup bell peppers diced (mix of red and green)
  • 1 clove garlic minced
  • ½ tsp smoked paprika
  • ¼ tsp chili powder
  • Salt & pepper to taste
  • For Assembly
  • 4 large flour tortillas
  • 1 cup shredded mozzarella
  • 1 cup shredded cheddar
  • 1 tbsp butter for frying
  • Optional Toppings
  • Sour cream
  • Salsa or pico de gallo
  • Fresh cilantro
  • Jalapeño slices

Method
 

  1. Cook the Sausage Mixture
  2. Heat olive oil in a skillet over medium heat.
  3. Add sausage, breaking it apart with a spoon until browned and cooked through.
  4. Add onions, peppers, and garlic. Sauté for 3–4 minutes until softened.
  5. Season with smoked paprika, chili powder, salt, and pepper. Remove from heat.
  6. Assemble the Quesadillas
  7. Lay out the tortillas.
  8. On one half of each tortilla, sprinkle a mix of cheddar and mozzarella, add a scoop of the sausage mixture, then top with another layer of cheese.
  9. Fold the tortilla over to close.
  10. Cook Until Golden & Melty
  11. Heat a large skillet or griddle over medium heat and melt a little butter.
  12. Cook each quesadilla for 2–3 minutes per side, until golden brown and the cheese is melted.
  13. Slice & Serve
  14. Cut each quesadilla into wedges.
  15. Serve hot with salsa, sour cream, and fresh cilantro.

Notes

wap sausage for ground chicken or chorizo for a flavor twist.
For a breakfast version, add scrambled eggs to the filling.
Add black beans or corn for extra texture.
Use whole-wheat or gluten-free tortillas if preferred.
