- Bloom the Gelatin
- In a small bowl, sprinkle gelatin over 2 tbsp water. Let it sit for 5 minutes to bloom.
- Prepare Mango Mixture
- In a small saucepan, combine mango puree and sugar. Heat over low-medium heat until warm and sugar dissolves.
- Add Gelatin
- Stir the bloomed gelatin into the warm mango mixture until fully dissolved. Remove from heat. Add lemon juice if desired.
- Pour into Molds
- Carefully pour the mixture into silicone molds or an ice cube tray. Smooth the tops with a spoon.
- Chill & Set
- Refrigerate for at least 2 hours or until firm.
- Unmold & Enjoy
- Gently pop gummies out of the molds and store in an airtight container in the fridge.
Notes
For firmer gummies, add an extra 1 tsp gelatin.
Experiment with other fruit purees like strawberry, pineapple, or kiwi.
Lightly dust gummies with cornstarch or powdered sugar to prevent sticking.
Keep refrigerated for up to 1 week for the best texture.
