- Group: Bake the Brownies
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined. Add the eggs and vanilla extract, whisking vigorously for about 1 minute until the mixture becomes slightly pale and glossy.
- Gently fold in the all-purpose flour, cocoa powder, and salt using a spatula just until combined and no dry streaks remain. Do not overmix!
- Spread the thick batter evenly into your prepared 8x8 pan. Bake for 25 to 28 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let them cool completely.
- Group: Make the Pistachio Filling
- While the brownies bake, melt 2 tbsp butter in a skillet over medium-low heat. Add the chopped kataifi pastry and sauté, stirring constantly, for 5 to 7 minutes until golden brown and crispy. Remove from heat.
- In a bowl, mix the warm toasted kataifi, pistachio cream, and tahini together until the crispy pastry is thoroughly coated.
- Spread the crispy pistachio-kataifi mixture evenly over the cooled brownies. Place the pan in the fridge for 15 minutes to let the layer firm up.
- Group: Ganache & Assembly
- Pour the warm heavy cream over the chopped chocolate. Let it sit for 2 minutes, then stir smoothly until a glossy ganache forms.
- Pour the ganache evenly over the pistachio layer and smooth it out.
- Chill the assembled brownies in the refrigerator for at least 1 to 2 hours until the chocolate topping is fully set. Slice into 12 squares and serve!

Storage: Store leftovers in an airtight container in the refrigerator for up to 5 days. Let sit at room temperature for 10 minutes before eating for the best fudgy texture.
