Ingredients

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • ¾ cup beer lager or ale
  • ½ cup milk
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper optional for heat
  • 4 oz cream cheese softened
  • 2 cups shredded sharp cheddar cheese
  • Salt & pepper to taste

  • Soft pretzels or pretzel bites
  • Crackers bread, or veggies

Method
 

  1. Make the Roux
  2. In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute until smooth and bubbly.
  3. Add Liquids
  4. Gradually whisk in beer, then milk, stirring constantly until slightly thickened.
  5. Add Flavor
  6. Stir in Dijon mustard, garlic powder, and cayenne. Reduce heat to low.
  7. Melt the Cheese
  8. Add cream cheese and whisk until melted. Stir in shredded cheddar until smooth and creamy. Season with salt and pepper.
  9. Serve Warm
  10. Pour into a serving bowl. Serve immediately with soft pretzels or dippers of your choice.

Notes

Use your favorite beer — lager for mild flavor, IPA for boldness.
For a non-alcoholic version, replace beer with chicken or vegetable broth.
