Ingredients

  • 1 lb Fully cooked chicken apple sausage sliced into coins
  • 1 tbsp Olive oil
  • 2 medium Honeycrisp or Granny Smith apples cored and sliced into wedges
  • 1 medium Yellow onion sliced
  • 3 cups Brussels sprouts trimmed and halved or chopped cabbage
  • 2 cloves Garlic minced
  • Group: Seasoning & Finish
  • 1/2 tsp Dried thyme or rosemary
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black pepper
  • 1 tbsp Apple cider vinegar optional, for a bright finish

Method
 

  1. Group: Sauté the Apples & Veggies
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the sliced apples, onion, and halved brussels sprouts. Cook, stirring occasionally, for 6 to 7 minutes until the apples begin to caramelize and the vegetables soften.
  4. Stir in the minced garlic, dried thyme, salt, and black pepper, cooking for 1 more minute until fragrant.
  5. Group: Brown the Sausage & Combine
  6. Add the sliced chicken apple sausage coins into the skillet with the apple and vegetable mixture.
  7. Cook for another 5 to 6 minutes, stirring occasionally, until the sausage is browned and heated thoroughly.
  8. Drizzle with apple cider vinegar if desired, toss gently, and serve warm!

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Reheat easily in a skillet over medium heat.
