Ingredients
  

  • 4 cups yellow squash sliced
  • 1 medium onion chopped
  • 2 tbsp butter
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ cup sour cream or Greek yogurt
  • ¼ cup all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder optional
  • For the Topping
  • ½ cup breadcrumbs
  • 2 tbsp melted butter
  • 2 tbsp shredded Parmesan cheese

Method
 

  1. Preheat Oven
  2. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  3. Cook Squash & Onion
  4. In a skillet, melt butter over medium heat. Sauté onions until soft, then add sliced squash and cook for 5–7 minutes until slightly tender.
  5. Make Casserole Mixture
  6. In a mixing bowl, combine cooked squash and onions, cheddar cheese, Parmesan, sour cream, flour, salt, pepper, and garlic powder (if using). Mix well.
  7. Transfer to Baking Dish
  8. Pour mixture into the prepared baking dish and spread evenly.
  9. Add Topping
  10. In a small bowl, combine breadcrumbs, melted butter, and Parmesan. Sprinkle over the casserole.
  11. Bake
  12. Bake for 25–30 minutes until the topping is golden and the casserole is bubbly.
  13. Serve
  14. Let cool slightly before serving. Garnish with fresh parsley if desired.

Notes

Add cooked bacon or ham for extra flavor.
Swap cheddar with Gruyère or Monterey Jack for a different cheesy taste.
Use gluten-free breadcrumbs if needed.
Prepare ahead and refrigerate; bake just before serving.
