- Preheat Oven
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook Squash & Onion
- In a skillet, melt butter over medium heat. Sauté onions until soft, then add sliced squash and cook for 5–7 minutes until slightly tender.
- Make Casserole Mixture
- In a mixing bowl, combine cooked squash and onions, cheddar cheese, Parmesan, sour cream, flour, salt, pepper, and garlic powder (if using). Mix well.
- Transfer to Baking Dish
- Pour mixture into the prepared baking dish and spread evenly.
- Add Topping
- In a small bowl, combine breadcrumbs, melted butter, and Parmesan. Sprinkle over the casserole.
- Bake
- Bake for 25–30 minutes until the topping is golden and the casserole is bubbly.
- Serve
- Let cool slightly before serving. Garnish with fresh parsley if desired.
Notes
Add cooked bacon or ham for extra flavor.
Swap cheddar with Gruyère or Monterey Jack for a different cheesy taste.
Use gluten-free breadcrumbs if needed.
Prepare ahead and refrigerate; bake just before serving.
